There are numerous recipes with dried apricots you can try at home to treat yourself to a sweet feast. They will not only be delicious but also healthy, so you don’t need to feel bad about eating dessert.
Healthy Apricot Flapjacks
This flapjack recipe is a bit more on the healthy side. Melt 100 g butter and 100 g golden syrup together. Taking it off the heat, add 50 g mixed seeds of your choosing, 50 g of dried cranberries, 50 grams of raisins, 50 grams of dried apricots and 250 g of oats. Add one beaten egg to the mixture. Press the mixture until flat into the cake tin lined with a baking sheet. Bake until golden, for about 18 to 20 minutes in a preheated oven at 180-200C.

Oatmeal Apricot Cookies
Recipes with dried apricot wouldn’t be complete without oatmeal cookies. Mix 1 ½ cups of flour, 1 teaspoon of baking powder ad ½ teaspoon of salt together. Beat 1 cup of butter and 1 ½ cups of sugar together. Add in 2 eggs and 1 teaspoon of vanilla extract. Finally, add the flour mixture in along with 3 cups of oats and stir. Chill for an hour and place tablespoon-sized dough on the pan lined with a baking sheet. Bake for 12 to 14 minutes in a preheated oven.
Apricot Crumble Crisp
This is another great recipe if you don’t prefer cookies. Cut 600 grams of apricot into small pieces. Arrange them in four small baking dishes with 2 tablespoons of vanilla sugar on top. Mix 50 grams of flour, 50 grams of sugar, 75 grams of oats and 30 grams of almond sticks in a bowl. Add in 60 grams of butter cut into small pieces and mix everything together with your hands. Divide the mixture over the apricots evenly. Bake for 20 minutes in a preheated oven at 180C.
